Step 1 – Cook Pasta
- Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Drain and rinse with cold water to stop cooking.
Step 2 – Prepare the Corn
- If using fresh or frozen corn, sauté it in a skillet over medium heat for 5–7 minutes until slightly charred.
Step 3 – Make the Dressing
- In a small bowl whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper.
Step 4 – Combine Ingredients
- In a large bowl combine cooked pasta, corn, red onion, jalapeño, cilantro, and cotija cheese.
Step 5 – Toss the Salad
- Pour the dressing over the salad and toss until evenly coated.
Step 6 – Chill and Serve
- Refrigerate for at least 20 minutes before serving to allow the flavors to combine. Garnish with additional cotija cheese, cilantro, and Tajin if desired.
