Ingredients
  

  • 4 bluefin tuna steaks (6 oz / 170 g each, sushi-grade)
  • 2 tbsps olive oil
  • 2 tbsps soy sauce
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tbsp sesame seeds
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 1 tbsp lemon juice

Method
 

  1. Prepare the Tuna

    Pat the tuna steaks dry with paper towels. Season both sides with salt and black pepper.
  2. Make the Marinade

    In a small bowl whisk together soy sauce, sesame oil, lemon juice, garlic, ginger, and sesame seeds.
  3. Marinate the Tuna

    Place the tuna steaks in a shallow dish and pour the marinade over them. Let them marinate for about 10 minutes.
  4. Heat the Pan

    Heat olive oil in a heavy skillet or cast-iron pan over high heat until very hot.
  5. Sear the Tuna

    Add tuna steaks and cook 1–2 minutes per side for rare or medium-rare.
  6. Rest and Slice

    Remove from the pan and let the tuna rest for 1–2 minutes.
  7. Serve

    Slice against the grain and serve immediately with sesame seeds and green onions.
